You know when you’re running through the grocery store scavenging for food because you’re STARVING? That was me yesterday.
To prevent myself from sitting down on the floor of Trader Joe’s and diving into the food, I grabbed anything and everything in sight and ran to the closest park bench to eat.
Only after shoveling about 10 almonds in my mouth at once did I realize I grabbed the wrong almonds… #fail. They had moved my wonderful dry roasted, salted almonds to a new shelf and put RAW almonds in their place. I’d just lunged out of habit (and hunger) to their old home.
Welp… when life gives you raw almonds, make oven-roasted rosemary almonds!
This turned into a win-win for me, actually.
1) I love trying new recipes
2) I’ve been growing rosemary for months and am always looking for an excuse to cook with it
3) This recipe yielded a delicious snack with very minimal effort
(So I guess that actually makes it a win-win-win!)
– One cup raw almonds
– 1 tablespoon diced rosemary
– 1 tablespoon olive oil
– 1 teaspoon chili powder
– ½ teaspoon salt
– ½ teaspoon pepper
Step 1: Preheat your oven to 325 degrees
Step 2: Stir all of the ingredients together
Step 3: Spread out on a cooking tray
Step 4: Cook for 20 minutes (moving them around on the tray every 5-10 minutes)
Step 5: Let cool a bit and enjoy!
This little mistake turned into quite the delicious snack :) I did learn my lesson about blindly grabbing things off shelves in TJ’s though.
