My birthday is in 3 days! How on earth is that even possible??
I swear we were just celebrating Christmas, I blinked and now it’s February! The days have flown by so fast in fact I just realized I have not posted on my blog this whole week. Hopefully this life lately post will get you all up to speed.
Reading: way too many books at this moment. Whenever I get my audible credits for the month I instantly buy all.the.books! I’m almost done with Everything You Want Me to Be by Mindy Mejia (exactly the thriller I was looking for!), The Last Days of Night by Graham Moore (super interesting, but very slow), and The Wonder by Emma Donoghue (which I may have to give up on since it’s doing nothing for me).
Planning: my birthday celebration! I decided I wanted to ditch Miami for the weekend and head home to Sarasota to celebrate with family and friends. I haven’t had a birthday at home in years, so this is an extra special treat. Not revealing my age though, I still can’t quite believe the number (eek!).
Needing: to get my hair done… really badly. But since getting highlights take hours to do, I can’t squeeze it in after work and the last three weekends have been jammed pack with activities. I’m just pretending that my dark roots are a new trend ;) Not sure if anyone else thinks that though…
Organizing: after my trip to DC last weekend! The boyfriend and I flew up to surprise his sister for her engagement party, but since it was top secret (we are pretty sure she found out anyways though) I couldn’t post about it. Let me tell you one thing, it was freezing, but the party was well worth it! I also got to enjoy a tasty brunch at Ted’s Bulletin on 14th with my best friend from college! P.S. If you live in DC, go get their blueberry poptart, you will thank me.
Playing: all the activities again! My hand has finally healed (although I’m still working in my Mederma PM every night since it’s not the prettiest scar yet) and I’m finally back to doing all the active activities again. I’ve taken a few people down in ping pong at work, playing golf this weekend with my father, and lining tennis up for next week! It’s a good feeling to be back.
Eating: These healthy pancakes, probably so much that they aren’t healthy anymore :) I used to make these all the time, but hadn’t for quite a while. The other morning when I was craving something extra special for breakfast, this recipe came flooding back to me. This isn’t just the standard “two ingredient pancake” (2 eggs and 1 banana), it’s jazzed up a bit, but still super easy!
- 2 eggs
- 1 ripe banana
- 1 tbs rolled oats
- 1/2 tbs chia seeds
- 1 tsp cinnamon
- Mix all 5 ingredients together in a blender (I used my Magic bullet).
- Pour out small rounds onto a hot skillet (about 2-3 inches wide).
- Cook until slightly brown on both sides (about 1-2 minutes per side).
- Top with a bit of maple syrup and fresh fruit.
- If I'm in a hurry, I make little pancake sandwiches with some sliced strawberries and almond butter between two pancakes :) The perfect on the go "breakfast sandwich".
