I have caffeine flowing through my veins, I already got my workout in for the day, and I have a tummy filled with these delicious overnight oats!
Who ever said that Monday had to be rough?
I blinked and the weekend was over. I swear, we really need an extra day between Sunday and Monday. But I knew this would be the case, so last night I prepared!
I answered all the emails I could easy clear out of my inbox so it wasn’t cluttered in the morning.
I painted my nails and did an extra deep conditioner mask on my hair since I never have time for either of these things during the week!
I finished all the laundry AND put it away (I won’t admit how long my drying rack stayed up in the middle of the bedroom last week).
I whipped up the boyfriends favorite make-ahead bacon and egg muffins so he can easily heat them up in the morning for breakfast.
AND I even prepared these tasty overnight oats for myself :) Usually a few cups of coffee and a piece of fruit or a yogurt is all I need, but I decided starting with something extra delicious this morning would make my Monday feel less like a Monday.
- 1/2 cup oats
- 2/3 cup almond milk
- 1/2 tsp. cinnamon
- 1 tsp. maple syrup
- 1 tbs. almond butter (I used Justin's Maple Almond Butter)
- Fresh strawberries
- Mix the oats, milk, cinnamon, and syrup together in a small bowl.
- Cover and put in the refrigerator overnight.
- In the morning, top with almond butter and strawberries.
