We are all creatures of habit, especially when something is delicious :) At least that’s the case for me.
Sometimes we need to treat ourselves to something we really love and crave. And when it’s healthy and tasty, it’s a win-win!
Some days you just need a cocktail. Especially on a Thursday, when Friday is so close yet so far.
But at the same time, no one has time to make simple syrup, boil water, use ingredients just for garnish, or mull fruit until the cows come home. Thursdays are busy!

My blog took the back seat as I ran around Breckenridge for the past few days.
What’s funny is that I’ve never taken a vacation to somewhere cold before. Whenever we did family vacations growing up it would be to warm places, snow free!
Last weekend was the boyfriend’s birthday and we ended up booking a spontaneous trip to Breckenridge, Colorado! We had friends who were going and had an extra room in their Airbnb. It was a no brainer to jump on the earliest flight we could find to join them!
I’m not a spontaneous person. This comes in handy when making sure there are always groceries in the fridge and I’m on time for appointments. But it’s not handy when the boyfriend wants to randomly drop everything and head to the beach for a day.

I’ve been having a bit of writers block lately on Anchored to Sunshine and I haven’t posted on Instagram for over a week-ish. But finally, last night as I was standing under the warm waterfall of my shower, this post came to me.

It’s easy to fall into a rut when it comes to activities in your city. You’ve figured out the best dinner spot. Know your go-to takeout Thai restaurant. You have the perfect sports bar to watch the game at (poor Falcons). And you rarely change your caffeine-fix pit stop location every morning.
I was stuck in a exploration rut. I live in Brickell. I walk to work (3 blocks). I can walk to Publix and CVS. I have dozens of restaurants all within a few blocks of my house. So as you can probably tell, it’s pretty easy to never have to travel more than 6 blocks.
My birthday is in 3 days! How on earth is that even possible??
I swear we were just celebrating Christmas, I blinked and now it’s February! The days have flown by so fast in fact I just realized I have not posted on my blog this whole week. Hopefully this life lately post will get you all up to speed.
You know I love a good thriller, and 2017 is starting off strong in this genre!
Last year I was up all night reading these three amazing books that caused me to sleep with the lights on for a few nights. But after reading the summaries of these three new books, they may give those a run for their money.
I have caffeine flowing through my veins, I already got my workout in for the day, and I have a tummy filled with these delicious overnight oats!

In April, the boyfriend and I are headed to Costa Rica! His friends are getting married and I’m going along for the fun :)
Although it’s still a few months away, I’m already starting to organize the trip (and go to the gym more).

Sometimes, there just isn’t time. And I’m learning to be ok with that. I would rather produce engaging posts you all want to see, then throw a few words in the screen and post just for the sake of posting.
If you are a blogger, then you know how hard it is to balance it all. If you aren’t a blogger, then just think about how hard it is to do a hobby or even get to the gym during the week. Sometimes it just isn’t in the cards.
Over two weeks into the new year and my fitness resolution is still holding strong!
I credit coffee for getting me out of bed in the morning, my Apple Watch for forcing me to do a bit extra each day, and my boyfriend for holding me accountable when I lunge for the leftover Christmas M&Ms. Seriously, that candy needs to go!
9 days ago I’m fairly certain each and every one of us made a vow to “eat healthier in 2017”. But of course there was leftover Christmas candy, that tasty donut shop down the street, and maybe some late night snacking only seen through the refrigerator light.
